A Cake Of Sweet Romance With Strawberry Jam And A Rose Water And Almond Buttercream Frosting

This cake is all about the love and romance!

There is nothing that says romance like roses and almonds.  Add a Spanish cake recipe and you have a cake that looks and tastes like love.  This cake, like no other, has moved me.  It brings me to a place of great celebration, a longing for a life together, a wedding!  It was inspired by a recipe by Andra Kubala called "Sweet Romance" and oh how I love it!  Of course, I did not follow the recipe simply because I had forgotten an ingredient and I only had a small amount of rose water plus I tend to do things a little differently anyway, but it came out better than I could have ever dreamed!  How wonderful is the taste of dulce romance! 


For The Cake:

2 1/2   cups flour, sifted

1   cup sugar

1   teaspoon salt

1   Tablespoon plus 1 teaspoon baking powder

3/4  cup unsalted butter, softened

3   eggs

1/3   cup rose water

1   cup sour cream

1   teaspoon pure vanilla extract

1   teaspoon pure almond extract


For The Frosting:

1   cup butter, softened

4   cups confectioner's sugar

2 - 3   Tablespoons milk

1/2 to 1  teaspoons pure almond extract

1 to 3  teaspoons rose water

For The Cake:

1.   Grease and flour two 8" cake pans

2.   Combine flour, salt, sugar, and baking powder in a bowl and set aside.

3.   Cream remaining ingredients together in the bowl of an electric mixer.

4.   Add flour mixture and mix well.

5.   Divide the batter evenly between the cake pans and bake at 325 degrees for 30 minutes or until a cake tester or knife comes out clean when inserted.

6.   Remove from oven and let cool slightly before turning out onto a cooling rack.

7.   Cool completely before frosting.


For The Frosting:

1.   Cream together butter and confectioner's sugar.

2.   Add milk one Tablespoon at a time until desired consistency.

3.   Add almond extract and rose water to taste, mixing until well combined.  (I have found that beating the frosting for several minutes makes it very light and easy to spread)

4.   Spread a layer of strawberry jam and frosting before stacking the two cakes and frosting.

5.   Enjoy a slice of "Sweet Romance".
