My Sunday Is All About The Pancakes!

Sunday is my favorite day of the week!  It is the first day of my weekend.  I have no where that I need to be, no demands, and best of all, it's my day for pancakes!  I always laugh about my Sunday because I am not the only one who looks forward to it.  My dogs, Jackie and Ranger, love their pancakes too!  I always tell them how lucky they are to have me as a mommy! Who else would make them pancakes and make enough batter to last for a few more extra pancake days?! No one, I tell them, except maybe for Angie, my son's girlfriend, but she lives in Colorado, so it's really just me!  My recipe is so simple, I have been using it for years and years.  The great thing about it is that I can exchange gluten free flours for regular flour and the recipe still works.  I can use buttermilk instead of regular milk and it still works.  I can use maple syrup instead of sugar and the recipe still works.  It is just one of those wonderful things!  Make pancakes, it can change your whole Sunday!  I know it does mine!

Ingredients:  1 1/2 cups flour, 3 Tablespoons of sugar, 1 1/2 teaspoons baking powder, 1/2 teaspoon salt, 3 Tablespoons of melted unsalted butter, 1 1/2 cups milk, and 2 eggs
