My Classic Margherita Pizza

One of my favorites, the margherita pizza!  You will find that I do not use a red sauce with most of my recipes, but feel free to use it here instead of the roasted cherry tomatoes.

Preheat oven and pizza stone at 500 degrees for a minimum of 30 minutes.

Ingredients:  roasted cherry tomatoes (I roasted a few jalapeno peppers along with the cherry tomatoes for some heat, but that's just me), fresh mozzarella, sliced, shredded mozzarella, and fresh basil.

 

Using the back of a spoon, spread a nice thin and full layer of the roasted cherry tomatoes over your rolled out dough.  Place fresh slices of mozzarella on top, don't over do, followed by a handful of shredded mozzarella, again not going crazy.  Tear fresh basil into pieces and top your pizza with them.  Bake in your fabulously hot 500 degree oven until golden brown and bubbly.  Enjoy!
