Pancetta, Corn, And Red Onion....My new favorite!


This incredible combination is thanks to a friend of mine, hence the name "The Jef Special"! It is a great mix of salt (from the pancetta) and sweetness (from the corn).  The red onion just rounds out all the flavors perfectly.  I love having friends that adore pizza and like to think outside the box.  Thanks Jef for my new favorite!

As Always, Preheat oven and pizza stone at 500 degrees for a minimum of 30 minutes :)

Ingredients: pancetta or bacon, cooked and crumbled,  2 to 3 ears of fresh corn with the kernels removed, red onion, diced small, fresh basil, roughly chopped, fresh mozzarella, sliced, shredded mozzarella, and grated parmesan.

Brush your rolled out dough with a very thin layer of olive oil and begin your layering.  Start with a sprinkle of parmesan followed by a layer of pancetta and corn.  Spread some shredded mozzarella, followed by a layer of red onion and more pancetta and corn.  Top with the fresh mozzarella slices, basil, more shredded mozzarella, and a final sprinkle of parmesan.  Into your hot oven it goes, and cook until it is brown and lovely.  Yummy!

Note:  I usually make small pizzas, so please adjust your ingredients accordingly if you make larger pies.
