Peppers And More Peppers!

3 pepper and red onion, oh my!

 

I definitely had peppers on my mind when I made this pizza.  This is a great combination that adjusts very easily to your tastes.  I love spice and this pizza has it!  

As always, preheat oven and pizza stone at 500 degrees for a minimum of 30 minutes. :)

Ingredients:  red bell pepper, yellow bell pepper, green bell pepper,  and red onion, very thinly sliced.  Freshly minced garlic, to taste.  Grated parmesan, shredded mozzarella, shredded pepper jack, and shredded monterey jack cheeses.  Fresh cilantro, roughly chopped (you could use thyme, rosemary, oregano, or even sage as a substitute for the cilantro).  Any combination of these herbs would be great!  

 

When I make a pizza, it is all about the layering.  I started with a thin layer of grated parmesan, followed by the minced garlic and then a thin layer of shredded mozzarella. Remember not to load up on the cheese, you want to be able to get your pizza off the peel and into the oven.  Next came the 3 peppers and red onion, followed by the pepper jack cheese, cilantro, and finished off with a layer of monterey jack.  With this pizza, I did a little grind of salt and pepper over the top.  Into your hot oven it goes and in about 15 to 20 minutes you have a fabulous pie!  Yum!
