The Mexican Leftover

Leftovers make the best pizzas!  Shredded pork, red onion, salsa verde, and pepperjack!

I love Mexican food so why not use my leftovers from a fabulous feast and make them into a spectacular Mexican inspired pizza!  

Preheat oven and pizza stone at 500 degrees for a minimum of 30 minutes.

Ingredients:  Shredded pork shoulder, salsa verde (tomatillo salsa), thinly sliced red onion, shredded pepperjack cheese, shredded mozzarella, thinly sliced fresh smoked mozzarella, and freshly chopped cilantro

A thought....When I do this combination again, I will throw on some sliced jalapeno peppers!


Brush your rolled out dough with a very thin layer of olive oil and begin your layering.  I started with a thin layer of salsa verde (you can use a traditional salsa if you prefer) followed by a scant layer of shredded mozzarella and shredded pepperjack.  The red onion comes next followed by the shredded pork shoulder.  Top with another layer of pepperjack, a handful of chopped cilantro, and finished with the slices of smoked mozzarella.  Place in your hot oven, cook until golden brown with cheese bubbling.  Enjoy!
