What To Do With All That Mint!

I don't know about your garden, but mine is filled to the brim with mint!  I have peppermint, spearmint, creeping mint, you name it, I probably have it.  At this time of year I am constantly trying to find new ways to use all that abundance.  This post is about  what I have discovered about mint!  First of all, it spreads like crazy, so be prepared.  It is a healing herb.  I steep it in a cup of boiling water for when my stomach doesn't feel right or when I've had a stressful day there is nothing more relaxing or soothing.  I make pesto with mint, garlic, and almonds to top off grilled chicken or fish.  I make a big pitcher of mint iced tea and put it in the refrigerator.  I throw mint in a salad or add it to my basic vinaigrette for a boost of flavor.  I use it instead of cilantro in salsa and guacamole.  I make a fabulous greek salad using mint and oregano.  It pairs well with just about any herb or vegetable.  I love it blended with sea salt, garlic, rosemary, and olive oil for an out of this world marinade for meats such as lamb or pork.  It is such a beautiful and versatile  herb and the fact that it comes in such an abundance just adds to its beauty.  So, grab a bunch from your yard or from mine and discover the taste of mint!
