Paprika, Sweet, Smoky, And Spicy

Paprika, a variety of ground dried sweet red peppers.  Originating in South America, it was Columbus who brought it back from his travels which then led it to becoming popular in the Spanish Kitchen. With its warmth and rich color, paprika spread to the Middle East and beyond becoming one of the most used spices in the world.  With its range of taste from sweet, to smoky, to spicy depending upon how it is dried and prepared, paprika is so versatile.  It is used for flavoring meat and casseroles, BBQ sauces, vegetable dishes, chicken and seafood, eggs, spice rubs, salsas, seasoned salts, sauces, and soups. It is the national spice of Hungary, famously known for its use in Hungarian Goulash. Spanish paprika is hotter and spicier than Hungarian, which is mild, smoky, and sweet.  I always love having a variety of paprika at the ready in my spice cabinet.
