Good knives, simply put, are a must have in any kitchen.  You don't need many to start, but there are 3 that are essential. The paring, which is ideal for peeling, slicing, trimming, and dicing small fruits and vegetables.  The chef's, which is the workhorse of the kitchen, is perfect for any job from chopping, slicing, and dicing, to smashing garlic!  The serrated, whether large or small, is wonderful for thinly slicing fruits and vegetables, for cutting citrus and cheese, and for slicing bread and meats.  Always buy quality and take care to keep them sharpened and you will have them for a lifetime.  I always suggest to people to buy one knife at a time and not to be afraid to mix it up with different brands and styles.  Every knife is unique.   Karen
