"Ramping" Up Your Spring
I am all about eating fruits and vegetables when in season, hence, I look forward to spring with much anticipation. The beautiful and wonderful tastes that only spring can bring are so worth waiting for. Asparagus, fiddleheads, spinach, spring onions, those first tender lettuces, and my personal favorite, ramps! They are the pungent cousins of leeks. They grow wild and are gathered by commercial foragers. Ramps can be used in so many different ways, in pesto, in egg dishes (omelets and quiches), in rice and risotto, but my favorite way is tossed with olive oil, salt & pepper, and grilled until slightly charred. They are amazing and I usually end up eating them with my fingers. They are a fabulous entry into spring. Enjoy!
