French Onion Soup, Perfect For A Chilly Spring Dinner

Right from the oven, hot, gooey, and delicious!

I love making soups!  During the fall and winter soup is usually simmering on the stovetop on any given Sunday afternoon.  But on those chilly, early spring evenings, french onion soup is always on the menu and cooking in my kitchen.  It must be the anticipation of those spring onions or the planting of onions in my garden that calls me to my kitchen for a beautiful crock of onions, broth, and cheese. It is such a rustic, simple soup to make and oh so comforting that I am amazed that I don't make it every Sunday!  I love to pull out and use the soup crocks that belonged to my mother and I love making it for my brother, who loves it just as much as I do!  To me, food is love and french onion soup tops the list!
