For Cinco de Mayo, Tortillas, Carnitas, And Pickled Onions!

If someone were to ask me what my favorite type of food was I think that my response would have to be Mexican/Southwestern Food as a whole.  It is so fresh, inviting, and simple.  Simple foods, put together simply, and so delicious.  From salsas to slow cooked meats, to beans, to vegetables, rice, and to the herbs and spices that are used, there is something for everyone in Mexican and Southwestern cooking. In my kitchen this week, I am honoring my love of Mexican food with homemade tortillas, carnitas (slow cooked pork shoulder, shredded), and pickled onions.  It is a fun way to spend time in the kitchen and oh so delicious.  I hope to inspire you with the simplicity of my recipes and my passion for this delicious type of food.
